Heart Healing Magic Mineral Broth

I love making this broth in Summer!  Summer correlates with the season of the Earth, but also with the Full Moon, Ovulation, times of blooming, and our highest bright energy times.  The balanced version of summer is big, full, beautiful, and sexy expression.  The imbalanced version of summer is burnout, anxiety, depression, overthinking and overwhelm.
This broth is delicious and simple.  It had lots of mineralizing veggies and herbs, along with heart healing, and gut soothing herbs to soothe the gut and nervous system.  We add Calendula here to help heal the lining of the gut and move the lymphatic system and Hawthorn berry for soothing the heart and gut.  

1 gallon bag veggie scraps

OR
  • 4-6 large carrots, peel on, chopped
  • 4 stalks celery, chopped
  • 2-3 large yellow potatoes, skin on, roughly chopped
  • 2 large sweet potatoes, skin on, roughly chopped
  • 2 large onions, skin on, quartered OR 4 leeks cleaned and chopped
  • ½ bunch spinach 1-2 cloves garlic, smashed with skin on​
  • 1 inch piece ginger chopped with skin on
  • Handful chopped fresh parsley including stem
  • 1 piece kombu seaweed
  • 2 TB dried nettle leaf or 1/2 cup fresh nettle leaf
  • 1 large or 2-3 small Lion’s Mane mushrooms, fresh or dried
  • ¼ cup dried hawthorn berries or 3/4 cup fresh
  • ½ cup dried calendula flower (whole head)
  • 1 TB whole peppercorn
  • 2 fresh or dried bay leaves
  • 1 tsp coconut oil, may leave out if adding meat and bones
  • 12 cups filtered or spring water
  • Salt to taste
  • Optional 2-3 lbs chicken bones, pre cooked or roasted (plus 2 TB apple cider vinegar)
  • Optional: ¼ cup coconut aminos added after straining
  • Optional: splash of lime juice upon serving warm

Instructions:
  1. Coarsely chop the vegetables into even sized pieces.
  2. Place all the ingredients in your slow cooker and add the water to cover. Set to 5 to 6 hours on high or 10 to 12 hours on low. (You can simmer it for longer for a more flavorful and reduced broth)
  3. (To make on the stovetop) In a large stock pot, cover the vegetables, herbs and spices with the water and bring to a boil. Reduce heat and barely simmer on low for about 90 minutes for vegan broth  and 6 or more hours for bone broth.
