Best Vegan Paleo Chocolate Chip Cookie Recipe

I’ve made this recipe so many times, that I know it by heart.  Next to my gluten free challah recipe, it’s the most requested by our friends and family.  Like everything else I make, it meets my criteria of gluten free, dairy free, processed sugar free, and delicious.  These cookies also also happen to be vegan, which is a bonus! I use this vegan cookie dough raw for ice cream because there are no eggs. O,f course it's also great to have a delicious vegan cookie recipe on hand for vegan friends. This is another one of those recipes that people absolutely cannot believe how clean and nourishing the ingredients are. The original recipe came from Elana’s Pantry and I have modified it to meet my needs.  These cookies are sooo good. Enjoy!

  • 2½ cups blanched almond flour (not almond meal), the Costco brand works great as well. Bob's does not.
  • ½ teaspoon celtic sea salt
  • ½ teaspoon baking soda
  • ½ cup grapeseed oil or avocado oil (I prefer avocado oil)
  • 1 tablespoon vanilla extract
  • ½ cup grade B maple syrup
  • 1 cup dark chocolate chips (I use Enjoy Life brand)
Instructions
  1. Combine dry ingredients in a large bowl
  2. Stir together wet ingredients in a small bowl
  3. Mix wet ingredients into dry
  4. ​Cool dough in fridge for 20-30 mins
  5. Form 1 inch balls and press onto a parchment paper lined baking sheet 2 in. apart
  6. Bake at 350°F for 12-14 minutes (watch this closely, oven times vary and these get brown quickly)
  7. Cool and serve​

Do you think raisins or carob chips would work? Hubby allergic to chocolate....

Yep! You can really use anything. I would try carob chips. Let me know how it goes!
