These delicious little date balls are packed with nourishment, but also great for an energy boost and as paleo vegan dessert. My family loves these in the fall and we keep them in the fridge for several days as a healthy go-to treat. Try rolling them in cocoa, coconut, or cacao nibs! Whole30, Paleo, Gluten Free, Dairy Free, Grain Free Ingredients:
2-2.5 cups chopped medjool dates or 24 oz ¼ cup soy free earth balance, avocado oil, or coconut oil ¼ tsp Himalayan pink salt 1.5 - 2 cups toasted chopped pecans (any nut or other filling will do!) Instructions: Chop dates and remove seeds. Heat oil in saucepan on low heat and add chopped dates. Stir on low heat until dates soften and lose shape. Continue stirring until all oil is combined and the date/ oil mix starts to ball like dough. Let cool in pan. Add in toasted chopped pecans and combine Form 1 - 1.5 in balls gently y rolling in hands. Refrigerate for up to a week and enjoy!

If we are surrounded with great and healthy snacks like this, people can get healthier! These Paleo Date Balls with Toasted Pecans aren't just healthy because I am sure with the fact that these are very delicious too! As far as I am concerned, I don't think I will have a hard timer preparing it. As soon as possible, I am going to make my own version of it; I am pretty pretty sure that my niece and my mother as well will love it!
