Hearty Middle Eastern Beef Stew with Bone Broth

I know that there are a lot of beef stew recipes out there, but you will not regret giving this one a try! Bone broth is used as a base stock to truly increase the nutritional benefits and mineral content, and the spices are warming and so flavorful! This stew is delicious, gut healing and mineralizing. I served this to my very large extended family recently and all ages loved it!

This recipe is so incredibly simple and requires very little preparation time.  It freezes well and I freeze it in 16 oz containers to bring out for quick lunches.

Ingredients:
  • 2 lbs beef stew meat (high quality, pasture raised) 
  • 6-8 cups bone broth (beef is recommended)
  • 2 onions, chopped (1/2 inch pieces)
  • 6 medium yellow (or other) potatoes, cubed (1” pieces)
  • 8 carrots, peeled and chopped
  • 2 Tbsp avocado oil
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 Tbsp fresh ginger, minced
  • 2 Tbsp fresh garlic, minced
  • 2 Tbsp fresh parsley, chopped
  • 2 bay leaves
  • Salt and pepper to taste
Directions:
  1. In a 7-10 quart stock pot, heat the avocado oil and brown the stew meat.  
  2. Add the onions and sauté until tender.  
  3. Add the fresh ginger and garlic and sauté until aromatic.  
  4. Add the cumin, coriander and turmeric. Cover with broth and simmer on medium low until the meat is tender.  
  5. Add the remaining ingredients and cook until the potatoes are tender, but not overdone. Stir in the parsley.  Add salt and pepper to taste. Enjoy!
